摘 要:对不同养殖模式下固始鸡肉及鸡蛋中氟苯尼考、阿莫西林和强力霉素的积累和残留进行了测定比较.结果显示:无抗养殖的鸡胸肉、腿肉和肝脏中均不含抗生素,随着养殖时间的增加,有抗养殖鸡中抗生素在鸡胸肌、腿肌及肝脏中的积累量逐渐增加;将有抗养殖模式下放养和舍养比较,舍养更容易使肌肉中积累残留氟苯尼考、阿莫西林和强力霉素等抗生素,尽管抗生素残留量都是在食品安全控制的合格范围,但仍然对鸡肉的优质安全造成潜在危险;而对鸡蛋的检测显示,无抗养殖的鸡蛋中不含抗生素,有抗养殖模式下放养和舍养均不同程度检测出氟苯尼考、阿莫西林和强力霉素的存在,且舍养鸡蛋中抗生素的积累和残留更多.实验表明,养殖中抗生素是否使用和使用量是影响鸡肉和鸡蛋中抗生素残留的主要因素,控制抗生素的使用是保证产品无抗安全的关键所在,且在有抗模式下舍养比放养更容易导致抗生素的积累和残留.Floifenicol,doxycycline and amoxicillin residues from Gushi chickens and their egg under differ -ent breeding modes are compared. The results show that as for the chickens feed without antibiotics , floifen - icol, doxycycline and amoxicillin are not detected in these chickens? breasts, legs and livers . Obviously, the quality of these chickens? meat can be ensured and their meat is safer. As the breeding time increases, the amount of antibiotics in chickens,breasts, legs and livers gradually increases. Floifenicol, amoxicillin and doxycycline antibiotic are more easily to accumulate in the muscles of the house-rearing chickens. Although the amount of residues is within the acceptable range,there exists a potential problem for the quality of chicken meat. The results show that the eggs from chickens feed without antibiotics do not contain antibiot -ics .Floifenicol, amoxicillin and doxycycline are detected in both free-range and house-rearing chickens? eggs. The amount of residue from house-rearing chickens is higher than that from free-range chickens. The experiment shows that the use of antibiotics and the quantity of antibiotics used are the main factors affect -ing the amount of antibiotic residues in chickens and their eggs. Controlling the use of antibiotics is the key to ensure the safety of the products. The antibiotics are more likely to accumulate in house-rearing chickens compared with these from free-range chicken under breeding mode with antibiotics .
