摘　　要：统计了江苏洋河酒厂股份有限公司近5年的酿酒生产数据,分析气温与酿酒生产优级率和出酒率的规律,并探讨了气温对酒醅出、入池数据的影响。对白酒生产过程起到指导作用,同时为今后白酒酿造的研究工作提供数据支持和思考方向。The production data of Yanghe Distillery in recent five years were collected to analyze the rules between atmospheric temperature and liquor yield/quality liquor rate. Besides, the effects of atmospheric temperature on pit-entry data/pit-out data of fermented grains were explored. The study provided data support for the research on liquor production in the future and was helpful for guidding liquor production.
