摘 要:目的了解烟台市海产品副溶血性弧菌的污染情况,为海产品安全性风险评估及食物中毒预防提供科学依据。方法 2012-2016年在全市12个县市区的超级市场、农贸市场、餐饮企业及网店等4类采样点,三个季度采取6个类别的海产品共627份,按照GB 4789.7-2013《食品安全国家标准食品微生物学检验副溶血性弧菌检验》进行检验。结果 (1)627份海产品中副溶血性弧菌的总体检出率为27.11%,各年之间、各采样地点之间差异无统计学意义(值分别为2.278、1.338,P值分别为0.685和0.720);(2)第三季度副溶血性弧菌的检出率最高为35.22%,明显高于第二和第四季度(X^2=14.550,P=0.001);(3)藻类与其他动物性海产品相比,副溶血性弧菌的污染差异无统计学意义(值为2.008,P值为0.848)。结论烟台市海产品副溶血性弧菌的检出率较高且持续存在,是产生该食源性致病菌食物中毒的安全隐患,检出率存在季度差别,应采取相应措施对高发季度的海产品进行重点监测和管理。Objective To investigate the contamination of Vibrio parahaemolyticus in marine products in Yantai city, and to provide reference basis for assessing the safety of marine products and the prevention of Vibrio parahaemolyticus food poisoning. Methods A total of 627 marine products were collected quarterly from supermarkets, farmers' markets, caterings and online stores for testing Vibrio parahemolyticus. The samples were determined according to national standard method ( GB 4789.7 - 2013). Results ( 1 ) The total Vibrio parahaemolyticus detecting rate of 627 marine products was 27. 11%. Statistically significant differences were not found between years and between sampling sites ( x^2 = 2. 278 and 1. 338, P = 0. 685 and 0. 720). (2) The highest detection rate in the third quarter was 35.22% ,which was significantly higher than the second and fourth quarters ( x^2 = 14. 550, P = 0. 001 ). ( 3 ) Compared with other animal seafood, the algae contamination of Vibrio parahaemolyticus had not the statistically significant difference ( x^2 = 2.008,P = 0. 848). Condusion The phenomenon of the contamination of Vibrio parahaemolyticus in marine products in Yantai city continues to exist, and it has a high detection rate. It is a potential safety hazard of food poisoning, and there is difference in quarters. Some relative and effective measures should be taken to monitor the contamination of Vibrio parahaemolyticas in the high incidence quarter.
