摘 要:以自乳化性良好的低黏度辛烯基琥珀酸淀粉酯(OSA-S)和麦芽糊精(MD)为复配壁材,采用喷雾干燥法制备鱼油微胶囊,研究OSA-S与MD复配比、固形物含量、芯壁比、均质压力和进风温度对鱼油乳液及微胶囊化鱼油物理性能的影响,并利用单因素试验优化其制备条件。通过分析确定适宜的制备条件为:OSA-S与MD复配比3∶2,固形物含量30%,芯壁比1∶3,均质压力30 MPa,进风温度190℃。With mixture of low - viscosity octenylsuccinate - starch ( OSA - S) with good self - emulsif-ying property and maltodextrin drying. The effects of ratio of (MD) as wall materials, the fish oil microcapsule was prepared by spray OSA -S to MD, solid content, ratio of core to wall, homogenization pres- sure and inlet air temperature on physical properties of fish oil emulsion and microcapsule were investiga- ted. The preparation conditions were optimized by single factor test. The optimal conditions were deter- mined as follows : ratio of OSA - S to MD 3: 2, solid content 30%, ratio of core to wall 1 : 3, homogeniza- tion pressure 30 MPa and inlet air temperature 190 ℃.
