摘  要:为探讨红枣色素的抗脂质过氧化作用,采用大豆油、卵黄脂蛋白、亚油酸、小鼠肝脏匀浆、小鼠红细胞脂质过氧化体系研究红枣色素的抗脂质过氧化能力。结果表明,红枣色素抗脂质过氧化作用随红枣色素浓度升高而增强,且呈良好的量效关系。红枣色素能明显抑制大豆油脂质过氧化,其IC_(50)为0.96 mg/m L;红枣色素对Fe^(2+)诱发卵黄脂蛋白、亚油酸和Fe^(2+)催化亚油酸脂质过氧化均具有较好的抑制作用,在较高浓度的抑制率分别为45.30%±1.54%、59.92%±1.12%和43.57%±1.59%;对小鼠肝组织自发性脂质过氧化有一定的抑制作用,但对H_2O_2诱导小鼠肝组织脂质过氧化的抑制作用相对较弱;红枣色素能明显抑制H_2O_2诱导红细胞膜脂质过氧化和H_2O_2诱导红细胞溶血,其IC_(50)分别为1.25和0.82 mg/m L。研究表明红枣色素具有较强的抗脂质过氧化能力。In order to study the effects of anti-lipid peroxidation of jujube pigment, the anti-lipid peroxidation ability of jujube pigment were studied by using bean oil, linoleic acid, mouse liver homogenate and mouse erythrocyte lipid peroxidation system. The results showed that the anti - lipid peroxidation ability of jujube pigment was enhanced with the increase of the concentration of jujube pigment, and showed a good dose-effect relationship.Jujube pigment could significantly inhibit bean oil lipid peroxidation, the IC50 was 0.96 mg/mL.h had good inhibition effect on the yolk lipoprotein peroxidation induced by Fe2+ , linoleie acid peroxidation and linoleie acid peroxidation atalyzed by Fe2+ , under the high concentration of jujube pigment, the inhibition rates were 45.30% ± 1.15% ,59.92% ± 1.12% and 43.57% ±1.59% , respectively.Jujube pigment had a certain inhibitory effects on the mice liver lipid peroxidation, but the inhibition of mice liver lipid peroxidation induced by H2O2 was relatively weak. Jujube pigment could significantly inhibit erythrocyte membrane lipid peroxidation induced by H2O2 and erythrocyte hemolysis induced by H2O2, the IC50 were 1.25 and 0.82 mg/mL, respectively. The reseach showed that jujube pigment has a strong anti-lipid peroxidation capacity.
