摘  要:目的:研究鳕鱼骨胶原肽(BCP)及其钙肽螯合物(BCP-Ca)的营养吸收特性。方法:对制备的BCP和BCP-Ca进行氨基酸组成和傅里叶红外光谱分析;雌性Wistar大鼠分为7组:对照组、酪蛋白磷酸肽(CPP)高低剂量组、BCP高低剂量组、BCP-Ca高低剂量组,进行氮代谢实验,测定尿液及粪便中的氮含量。结果:BCP-Ca中Asp和Glu可能与钙发生较强结合;侧链上的氨基和羧基可能与钙发生了螯合反应,参与螯合物的形成;动物实验中,与对照组和CPP组相比,补充高剂量的BCP和BCP-Ca后,大鼠的氮平衡、氮储存率、表观消化率和生物价均有所提高,其中高剂量BCP组的氮平衡、氮储存率和生物价均显著升高(P<0.05)。结论:BCP和BCPCa的吸收利用度较好,具有良好的营养吸收特性。Objective: This study was performed to explore the nutrition absorption characteristic of Cod bone collagen peptide(BCP) and its calcium-binding peptide(BCP-Ca). Methods: The amino acid composition and Fourier Transform Infrared Spectroscopy were determined to analyze the BCP and BCP-Ca. Seven groups were set for the metabolic experiment: control group, high and low dose group of casein phosphopeptides(CPP), high and low dose group of BCP,high and low dose group of BCP-Ca. Nitrogen of urine and feces were determined. Results: Ca maybe combined with the Asp and Glu of BCP-Ca, meanwhile, the amino and carboxyl of side chain may react with calcium and formed metal chelates. In the animal experiment, compared with control group and CPP group, high dose of BCP and BCP-Ca could increased the nitrogen balance, nitrogen storage rate and biological value, especially the high dose of BCP(P〈0.05).Conclusion: BCP and BCP-Ca were easy to absorb and utilize, meanwhile they had great nutrition absorption characteristic.
