摘  要:草菇在干制过程中褐变严重,在实际生产销售中影响产品的外观和品质.选用非硫褐变抑制剂(非硫护色剂)氯化钙、柠檬酸、抗坏血酸、乙酸锌、氯化钠和乙二胺四乙酸二钠(EDTA-2Na)对草菇干制进行护色处理,并对草菇干制品进行复水试验.结果显示:氯化钙、柠檬酸、抗坏血酸和EDTA-2Na具有明显的护色效果,其中0.3%的EDTA-2Na处理后的护色效果较好,褐变度(BD)为1.768;抗坏血酸、乙酸锌和EDTA-2Na能明显提高草菇干制品复水比,其中0.3%的EDTA-2Na处理后复水比较高,为3.895 EDTA-2Na处理后的草菇干制品不仅BD最低,且复水比较高,是很好的草菇干制护色剂,其护色理想浓度为0.3%.The browning takes place in straw mushroom drying process, and it affects the appearance ofproduct in actual production. In this research, straw mushroom was treated by six non-sulfite colour fixative(CaCl2, citric acid, Vc, zinc acetate, NaCl, EDTA-2Na) during drying process with different concentrationrespectively. The effect of color protection was evaluated by tests of browning degree (BD) and rehydrationratio. The treatments had obvious effect of color protection with CaCl2, citric acid, Vc and EDTA-2Na. Theeffect of treatment was the clearest by 0.3% EDTA-2Na, and the BD was 1.768. The treatments could im-prove rehydration ratio of dried straw mushroom by Vc, zinc acetate and EDTA-2Na, and the treatment of0.3% EDTA-2Na had the highest rehydration ratio of 3.895. The results indicated that EDTA-2Na wasbetter non-sulfite colour fixative for drying of straw mushroom with the lower BD and the higher rehydrationratio, and the optimal concentration is 0.3%.
