摘  要:食品安全是探讨在食品加工、贮存、销售等过程中确保食品卫生及食用安全,降低疾病隐患和防范食物中毒等的跨学科领域。面对日益严峻的食品安全形势,准确可靠、行之有效、方便快捷的食品安全检测方法至关重要。针对现存的和不断发现的食品污染物、有害物质残留,识别、监测和量化新衍生并发现食品有害物质,传统的分析方法如常规质谱、常规色谱、常规光谱等技术,在特异性、灵敏度、重现性及效率方面已无法满足复杂样品的基质分析。随着先进功能纳米材料的出现,新型的分析化学手段如比色法、荧光传感、表面增强拉曼、电化学等方法在食品安全检测方面表现出高灵敏度、高精密度、高特异性、高通量、简便快速、高效低成本等优势。本文简述这些新技术、新方法,对后续先进的食品安全检测方法的开发做展望;提出基于纳米成像技术的食品安全实时无损研究手段,用以针对生物体内的食源性有害物质的分布代谢转化过程和致病机理研究,有望拓展创新性和先进性的食品安全分析方法和研究理念。Agri-foods are closely related to human health and sustainable society development. Food safety has emerged as one of the most important issues in the modern society. Detection of food contamination is critical to protect consumers away from harmful and dangerous substances in foods. Along with the progress in nanoscience, a variety of advanced functional nanomaterials were constructed to fabricate effective and innovative analytical techniques for food safety inspection. In this work, we summarized the advanced analytical methods that have been developed on the basis of advanced functional nanomaterials, including plasmonic nanomaterials-based colorimetric methods, fluorescent methods,molecular imprinting technology(MIT), advanced chromatographic methods, surface enhanced Raman scattering(SERS)technology, and electrochemical methods. Moreover, development of real-time and in situ analytical methods for sensitive and selective determination of food-borne harmful substances digested into human body would be the promising research direction in the food safety area, so as to clarify the harmful action mechanism inside the human body and promote the development of prevention and therapy of food-borne diseases.
