摘  要:通过测定牡蛎肉的主要营养成分、微量元素及重金属含量,评价了牡蛎肉的营养价值及食用安全性,为牡蛎肉的后期开发提供理论依据。营养成分测定结果显示,牡蛎肉中蛋白质含量为11.5 g/100 g,脂肪含量为3.4 g/100g,碳水化合物和钠的含量分别为8.5 g/100 g和219 mg/100 g,每百克牡蛎肉可提供466 kJ能量。此外,牡蛎肉中含有多种人体所需的微量元素,锌的含量是124 mg/kg,硒的含量是638μg/kg,铁的含量是7.77 mg/100 g。牡蛎肉安全性评价结果显示,重金属铅的含量为0.098 mg/kg,低于允许限量标准。因此,牡蛎肉营养丰富、食用安全,可作为高质量食品、保健食品、药品等开发利用。In order to provide theoretical basis for the later development of oyster meat, the nutritional value and edible safety of oyster meat were evaluated by measuring the main nutritional components and metal contents of oyster meat. The results showed that the protein content was 11.5 g/100 g, the fat content was 3.4 g/100 g, the content of carbohydrate and sodium were 8.5 g/100 g and 219 mg/100 g respectively, and 100 g oyster meat could provide energy 466 kJ. In addition, the oyster meat contained a variety of trace elements needed for human body. The content of zinc was 124 mg/kg, the content of selenium was 638 μg/kg, and the content of iron was 7.77 mg/100 g. The safety evaluation of oyster meat showed that the content of lead was 0.098 mg/kg, which was lower than the allowable limit standard. Thus, the oyster meat is rich in nutrition and safe to eat, which could be used as high quality food, health food, medicine and so on.
