摘  要:酚类化合物是一类广泛存在于植物体内且含有多个酚羟基的次生代谢产物,具有抗氧化、清除自由基、降血脂等多种生理活性。然而酚类物质存在难溶于水、见光易分解等问题,限制了其在食品行业的广泛应用。运载体系是一项常用的保护生物活性组分的技术,选择合适的运载体系对酚类物质进行包载,能够降低生物活性组分的降解速率,提高其在人体中的生物利用率。本文对现已存在的各类酚类物质运载体系及其制备方法进行综述,并对目前酚类物质运载体系研究中存在的问题和将来研究的重点进行总结和展望。Phenolic compounds are a group of secondary metabolites ubiquitously found in plants that contain multiple phenolic hydroxyl groups.Phenolic compounds have been proved to have a variety of biological activities.However,since phenolic compounds are insoluble in water and susceptible to photodegradation,their applications in the food industry are greatly limited.The delivery system is a technology commonly used for protecting bioactives and choosing the appropriate delivery systems can effectively reduce the degradation rate of phenolic compounds and improve their bioavailability.This article reviews current delivery systems to encapsulate phenolic compounds and their preparation methods.Problems existing in this field of research are discussed.Lastly,we conclude with some perspectives on future research priorities.
