摘  要:对提高窖泥功能菌生长及代谢产酸的方法进行了研究。结果表明,菌种复壮能有效增强菌种产酸能力,JZ-80复壮两轮、JZ-79和优质老窖泥富集液复壮一轮效果最好;经过热处理的窖泥和大曲粉,能够促进己酸菌的生长及产酸,同时还能为己酸菌快速适应窖池内环境奠定一定的基础;采用己酸菌和酵母菌混合培养以及多种己酸菌混合培养的方式,产酸情况均优于单一己酸菌培养。In the study,the methods of enhancing the growth and caproic acid-producing capacity of functional bacteria in pit mud were explored.The results suggested that strain rejuvenation could effectively enhance acid-producing capacity of bacteria strains.JZ-80 rejuvenation for two times and JZ-79 rejuvenation with quality aged pit mud enrichment solution for one time could achieve the best effects.Pit mud and Daqu powder,after heat treatment,were favorable to the growth of caproic acid and acid-producing.Meanwhile,it could help caproic acid bacteria adapt to in-pit environment quickly.Mixed culture of caproic acid bacteria and yeast strains,and mixed culture of different kinds of caproic acid bacteria were better than single culture of carpoic acid bacteria.
