摘  要:以香荚兰豆荚为试材,采用传统溶剂浸提后浓缩制得香荚兰浸膏,分析香荚兰浸膏物性及挥发性成分。结果表明:浸提40 d时,香荚兰浸提液中香草醛含量最高(1.732%),浸膏得率为5.48%。测定香荚兰浸膏物性指标显示:浸膏为深褐色膏状物,相对密度、折光指数、不挥发物含量、酸值和酯值依次为1.24、1.51、80.88%、46.49、235.02。通过3种不同萃取头对香荚兰浸膏萃取效果进行比较分析,CAR/PDMS萃取头萃取挥发性香气成分最多共检测出44种化合物,其中芳香族4种、醛类6种、酸类5种、醇类3种、杂环类2种、烷烃类3种、酯类21种。CAR/PDMS萃取头萃取得到对香气贡献较大的10种物质分别为:香草醛、邻甲氧基苯酚、丁二酸二乙酯、2-乙酰基吡咯、乙酰丙酸乙酯、苯乙醇、大茴香醛、壬醛、香草酸、苄醇,这10种物质的百分含量占总含量的81.76%。In order to study the physical properties and volatile components of vanilla extract,using vanilla pod as test materials,the vanilla extractum were prepared by traditional solvent extraction,followed by condensation.The results showed that,the vanillin content in vanilla extraction reached maximum when extracting time was 40 days,the content was 1.732%and extraction yield was 5.48%.The vanilla extract was dark brown paste solid,the relative density,refractive index,nonvolatile content,acid value and ester value were 1.24,1.51,80.88%,46.49,and 235.02,respectively.Extraction efficiency of three different extraction head fibers on vanilla extract were compared and the results indicated that a total of 44 volatile aroma compounds were detected by CAR/PDMS extraction head,including aromatic compounds(4),aldehydes(6),acids(5),alcohols(3),heterocyclics(2),alkanes(3)and esters(21).The 10 kinds of compounds which contributed greatly to aroma were as follows:vanillin,Phenol,2-methoxy,Butanedioic acid,diethyl ester,Ethanone,1-(1H-pyrrol-2-yl)-,Pentanoic acid,4-oxo-,ethyl ester,phenylethyl alcohol,Benzaldehyde,4-methoxy-,nonanal,vanillic acid,benzyl alcohol,and their contents were 81.76%of the total aroma contents.
