摘  要:对黄金桂、岭头单丛和大叶奇兰三个茶树品种的陈年乌龙茶的茶多酚、儿茶素、氨基酸、可溶性糖等生化成分的含量进行测定,并分别比较其体外抗氧化及抑制α-淀粉酶与胰脂肪酶的活性。结果表明:三个品种的陈年乌龙茶的茶多酚、儿茶素和氨基酸含量均表现为2016年比1990年高,没食子酸含量则相反,水浸出物、可溶性糖、黄酮类和咖啡碱含量没有明显规律。体外总抗氧化能力结果显示,岭头单丛和大叶奇兰陈年乌龙茶表现为2016年比1990年高,黄金桂则差别不大;三个品种的乌龙茶陈茶体外抑制α-淀粉酶和胰脂肪酶活性均表现为2016年比1990年高。灰色关联度分析结果表明,陈年乌龙茶茶多酚的总抗氧化能力(关联系数0.6292)和抑制α-淀粉酶活性(关联系数0.3136)贡献最大,而茶多糖对抑制胰脂肪酶活性(关联系数0.4715)贡献最大。The contents of polyphenols,catechins,amino acids,soluble sugars and other biochemical components in three varieties of aged oolong teas of Huangjingui,Lingtoudancong and Dayeqilan stored in different years were determined,and the activities of antioxidation and inhibition ofα-amylase and pancreatic lipase in vitro were compared.The results showed that the contents of tea polyphenols,catechins and amino acids of all three varieties of aged oolong teas in 2016 were higher than that in 1990,but it was the oppostie for the content of gallic acid.The contents of water extract,soluble sugar,flavonoids and caffeine in oolong teas had no obvious regularity.The results of total antioxidant capacity in vitro showed that the activity of Lingtoudancong oolong tea and Dayeqilan oolong tea stored in 2016 was higher than that in 1990,while that of huangjingui oolong tea stored in different year had little difference.The activity of inhibitingα-amylase and pancreatic lipase of all three varieties of aged oolong teas stored in 2016 was higher than that in 1990.The results of gray correlation analysis showed that the aged oolong tea polyphenols contributed the most to the total antioxidant capacity(correlation coefficient 0.6292)and the inhibition ofα-amylase activity(correlation coefficient 0.3136),while the tea polysaccharide contributed the most to the inhibition of pancreatic lipase activity(correlation coefficient 0.4715).
