摘 要:以阿拉伯胶、β-环糊精(β-CD)、Tween80为壁材,松籽油为芯材,通过喷雾干燥法制备微胶囊化松籽油粉末油脂。在壁材配比为阿拉伯胶∶β-CD∶Tween80=2∶1∶1(质量比)的条件下,考察了总固形物含量、松籽油添加量、进风温度对微胶囊化松籽油粉末油脂包埋率的影响,通过响应面优化确定最佳工艺条件为总固形物含量(相对于除蒸馏水以外的其余物质的质量分数)25%、松籽油添加量14%、进风温度170℃。在该条件下松籽油粉末油脂包埋率为92.84%,包埋效果较好。Microcapsules of pine nut powdered oil by spray-drying were prepared by spray-drying method with gum Arabic,β-cyclodextrin(β-CD),Tween80 as the wall material and pine nut oil as the core material.The effects of total solid content,pine nut oil addition and inlet air temperature on the microencapsulation efficiency of microencapsulated pine nut oil powder were studied under the condition of wall material was gum Arabic∶β-CD∶Tween80=2∶1∶1(mass ratio).The optimal process conditions determined by response surface methodology optimization were as follows:total solids content 25%,pine nut oil addition 14%,inlet air temperature 170℃.Under this condition,the microencapsulation efficiency of pine nut powdered oil was 92.84%,and the microencapsulation efficiency was good.
