摘  要:以玉米肽为壁材,猕猴桃籽油为芯材,吐温-20为乳化剂,采用喷雾干燥法制备猕猴桃籽油微胶囊。MTT试验结果表明,当微胶囊浓度≤400μg/mL时,其对Caco-2细胞生长无明显抑制作用,且质量浓度为100~400μg/mL的微胶囊对细胞的生长有促进作用。对微胶囊在Caco-2单细胞层的吸收特性进行研究,结果表明,微胶囊在高、中、低3个浓度时,微胶囊的生物利用率均高于25%。当质量浓度为100μg/mL时,微胶囊的生物利用率达到最高,为41.70%±1.65%。微胶囊溶液从AP侧到BL侧的表观渗透系数Papp在1×10^(-7)~1×10^(-6)cm·s^(-1)之间,吸收水平较好。Kiwi seed oil microcapsules were prepared by spray drying with kiwi seed oil as core material,corn peptides as wall material,and Tween-20 as emulsifier.MTT results showed when the concentration of microcapsules was less than or equal to 400μg/mL,there was no significant inhibition on the growth of Caco-2 cells,and the microcapsules with the concentration of 100-400μg/mL could promote the growth of cells.The absorption characteristics of microcapsules in Caco-2 monolayer were studied.The results showed that the bioavailability of microcapsules was higher than 25%at high,medium and low concentrations.When the concentration was 100μg/mL,the bioavailability of the microcapsules was the highest,reaching 41.70%±1.65%.The apparent permeability coefficient of the microcapsules from AP side to BL side was in the range of 1×10^(-7)cm·s^(-1)to 1×10^(-6)cm·s^(-1),and the absorption level was good.
