摘　　要：该试验以哈尔滨市售镜鲤(Cyprinus carpio var.specularis)为原料制备冷冻鱼糜,选择常用抗冻剂:蔗糖、木糖醇、山梨醇、焦磷酸钠,通过四因素三水平的试验设计方法,以鱼糜巯基含量为考察指标,得到适用于镜鲤鱼糜的复合抗冻剂配方为4%木糖醇,2%山梨醇,2%蔗糖,0.5%焦磷酸钠。The experiment in Harbin to sell Cyprinus Ms.Var.Specularis as raw material to the preparation of frozen minced fish,choose commonly used antifreeze:cane sugar,xylitol,sorbitol,sodium pyrophosphate,through experiment design method of four factors three levels,with minced fish sulfhydryl content as examining index,is suitable for the frozen minced fish of Cyprinus Ms.Var.Specularis composite antifreeze formula is 4%xylitol,sorbitol 2%,2%sucrose and 0.5%sodium pyrophosphate.
