摘  要:了解烟台居民膳食必需氨基酸(essential amino acid,EAA)摄入状况,评价其EAA摄入水平。采用连续3天24小时膳食回顾法对2岁及以上居民进行膳食调查,参考中国食物成分表计算居民膳食EAA摄入量,评价EAA摄入水平。结果表明,烟台居民膳食EAA平均摄入量女性>男性;年龄组比较,膳食EAA摄入量平均值:2岁组>3~10岁组>18岁及以上组>11~14岁组>15~17岁组,未成年人膳食EAA摄入量平均值与其年龄增长呈负相关。与EAA平均需要量(estimated average requirement,EAR)比较,2岁、11~14岁人群中EAA摄入量低于EAR,比例范围3.85%~50%;3~10岁人群6种EAA摄入量低于EAR,比例2.44%~29.27%;成年人7种EAA摄入量低于EAR,比例0.2%~9.82%;15~17岁人群仅有缬氨酸、赖氨酸摄入量低于EAR,占比为33.33%、50.00%。EAA种类间比较,各人群组赖氨酸摄入量低于EAR比例最高,芳香族氨基酸比例最小。按照EAA的适宜摄入量等于其EAR乘以1.25比较,仅有15~17岁人群赖氨酸、蛋氨酸摄入量未有超出适宜摄入量的情况,2~14岁人群、≥18岁人群均存在9种EAA摄入量高于适宜摄入量情况,比例范围8.62%~100%。烟台居民膳食必需氨基酸摄入量基本满足机体需求,但也存在部分未成年人摄入量不足和部分成年人摄入过量的风险。To describe the status of dietary essential amino acids(known as EAA for short)intake in Yantai residents and evaluate EAA intake levels of residents,the 24-hour dietary review for three consecutive days was used to estimate dietary nutrients intake of residents aged 2 years and above.The EAA intake of residents was calculated with reference to the Chinese food composition table,and the EAA intake level was evaluated.The results showed that the dietary EAA average intake of female residents was higher than that of male,the descending order of dietary EAA average intake for different age groups was 2 years old group>3 to 10 years old group>18 and older group>11 to 14 years old group>15 to 17 years old group,and the trend of minors dietary EAA average intake was negatively correlated with their age.Compared with the estimated average requirement(EAR,for short)of EAA,the intake of EAA in people aged 2 and 11 to 14 is lower than EAR,and the proportion ranges from 3.85%to 50%;6 kinds of dietary EAA intake of 3 to 10 years old group and 7 kinds of dietary EAA intake of adults were both lower than EAR that the proportion was 2.44%~29.27%,0.2%~9.82%respectively.Only the intake of valine and lysine in 15 to17 years old group is lower than the EAR,accounting for 33.33%and 50.00%.When different types of EAA were compared,the proportion of lysine intake lower than EAR in each group is the highest,and the proportion of aromatic amino acids is the smallest.It was only 15 to 17 years older group that the lysine intake was not higher than EAA safety intake,equal to EAR multiplied by 1.25,There are 9 types of EAA intakes that are higher than the appropriate intake for people aged 2~14 and those aged≥18,with the proportion ranging from 8.62%to 100%.The dietary essential amino acid intake of Yantai residents basically meets the needs of the body,but there are risks of insufficient intake of some minors and excessive intake of some adults.
