摘  要:对广西特色食品巴马火麻糊按照食品安全国家标准的要求进行真菌毒素(黄曲霉毒素B1)和微生物检验(菌落总数、大肠菌群、霉菌和酵母菌、致病菌)。分析样品是否受到微生物污染甚至产生真菌毒素。通过将数据汇总并对结果进行评价分析,达到对该类样品食用安全的了解。同时提出通过食品加工过程的控制微生物污染措施,控制有害物质的侵入,以便达到食品安全的要求。The Guangxi specialty food Bama hemp paste is subject to mycotoxin(aflatoxin B1) and microbial inspection(total number of colonies, coliforms, molds and yeasts, and pathogenic bacteria) in accordance with the requirements of national food safety standards. Analyze whether the sample is contaminated by microorganisms or even produce mycotoxins by summarizing the data and evaluating and analyzing the results, an understanding of the food safety of this type of sample can be achieved. At the same time, measures to control microbial contamination through food processing are proposed to control the intrusion of harmful substances in order to meet the requirements of food safety.
