摘  要:为回收利用油茶籽水相脱脂液中的功能活性成分,以油茶籽水剂法提油工艺产生的废液为原料,经醇沉、脱蛋白、脱色、真空浓缩和冻干等工艺,得到多糖纯度为58.24%、多糖回收率为80.50%的茶籽多糖产品。通过对油茶籽多糖产品与维生素C和叔丁基对苯二酚(TBHQ)在总还原力、Fe^(2+)螯合能力、羟自由基(·OH)和超氧阴离子自由基(O_(2)^(-)·)的清除能力等方面的比较,研究所得油茶籽多糖产品的抗氧化活性。结果显示:油茶籽多糖表现出明显强于维生素C和TBHQ的极强Fe^(2+)螯合能力,但其总还原力和对O_(2)^(-)·与·OH的清除能力均低于同质量浓度维生素C和TBHQ。可见,油茶籽多糖具有一定的体外抗氧化活性,具有作为天然植物来源的Fe^(2+)螯合剂开发的潜力。In order to recover and utilize the functional active components from defatted aqueous liquid of camellia seeds,the waste liquid produced by aqueous method of camellia seeds was used as raw material,and was subjected to alcohol precipitation,deproteinization,decolorization,vacuum concentration and freeze-drying.The camellia seed polysaccharide product with the purity of 58.24%and the recovery of 80.50%was obtained.By comparing camellia seed polysaccharide with vitamin C and tert-butyl hydroquinone(TBHQ)in total reducing power,chelating ability of Fe^(2+),scavenging ability of hydroxyl free radical(·OH)and superoxide anion free radical(O_(2)^(-)·),the antioxidant activity of polysaccharides from camellia seed was studied.The results showed that camellia seed polysaccharide had stronger chelating ability to Fe^(2+)than vitamin C and TBHQ,but its total reducing power and scavenging ability to O_(2)^(-)·and·OH were lower than those of vitamin C and TBHQ.Therefore,camellia seed polysaccharides have antioxidant activity in vitro and potential to be developed as natural plant source of Fe2+chelating agent.
