摘  要:为评价野生和套养沙塘鳢肌肉品质的差异,分别对白马湖野生沙塘鳢和蟹塘套养沙塘鳢肌肉一般营养成分、氨基酸组成、安全成分进行测定和分析比较。结果表明,野生和套养沙塘鳢肌肉在粗脂肪、粗蛋白、灰分方面无显著性差异(p>0.05),且粗脂肪质量分数低;氨基酸种类齐全,其中有16种氨基酸质量分数差异不显著(p>0.05);必需氨基酸占比分别为46.64和45.91,差异不显著(p>0.05);第一限制氨基酸均为缬氨酸,含有丰富赖氨酸;野生和套养沙塘鳢的必需氨基酸指数分别为85.57和83.19;重金属和抗生素等污染物均未检出。白马湖野生和蟹塘套养沙塘鳢肌肉品质差异不大,都是脂肪质量分数低、蛋白质组成合理、必需氨基酸占比高、易于消化的安全食品。To evaluate the difference of the muscle quality between the wild and intercropping Odontobutis obscurus, the common nutritional compositions, amino acids and safety components of these two kinds of fish in Baima Lake were analyzed.The results showed that there was no significant difference in the crude fat, crude protein and ash(p>0.05), and the content of crude fat was low. There were all kinds of amino acids, 16 of which had no significant difference(p>0.05). WEAA/WTAA of these two kinds of fish were 46.64 and 45.91, respectively, showing no significant difference(p>0.05). Valine was the first limiting amino acid and the content of lysine was rich both in the wild and intercropping Odontobutis obscurus. EAAI of these two kinds of fish was 85.57 and 83.19, respectively. Heavy metals and antibiotics were not detected. In conclusion, the difference of muscle quality was not significant between the wild and intercropping Odontobutis obscurus in Baima Lake, which was low in fat content, reasonable in protein composition, high in essential amino acids, easy to digest and safety to eat.
