摘　　要：铁观音品质优异,闻香“如兰似桂”,入口清香雅韵,素有“兰花香、观音韵”之称。文章对铁观音的滋味和香气品质化学研究进展以及近年来铁观音品质研究中所运用的新技术进行了较全面的综述,提出在品质成分快速测定、香气与滋味品质成分对特征品质的贡献和不同地域铁观音品质判别等领域可以进一步开展研究。Tieguanyin is of excellent quality,which smells like'orchid and osmanthus'and tastes delicate and elegant.This paper comprehensively summarized the research progress of Tieguanyin's taste and aroma quality,the related components as well as the new technologies used in recent years.It is suggested that further research should be carried out in the fields of rapid determination of quality components,the contribution of aroma and taste quality components to characteristic quality and quality discrimination of Tieguanyin in different regions.
