摘  要:目的分析测定攀枝花产印度块菌(松露)中香气化学成分的组成和相对含量。方法采用顶空固相微萃取法萃取攀枝花产印度块菌中的化学成分,利用GC-MS法对块菌中香气化学成分的组成和相对含量进行分析与鉴定。结果从攀枝花产印度块菌的香气成分中分析鉴定出37种化合物,占挥发性成分的100%,包括醇类、醛类、酮类、烃类及其衍生物等,其中,主要化学成分有异戊醛(55.41%)、正己醛(8.12%)、乙醇(5.14%)、1-辛烯-3-醇(3.62%)、异丁醛(3.27%)、桧烯(3.16%)、(-)-宁酮(2.41%)、苯乙醛(2.14%)、正戊醇(1.78%)、(3E)-3-乙基-2-甲基-1,3-己二烯(1.42%)、(-)-α-侧柏酮(1.22%)、3-辛酮(1.16%)、叔丁基苯(1.07%)和庚醛(1.02%)等。结论所用方法具有不需要有机溶剂、自动便捷、高效快速、安全环保的特点,为研究与开发攀枝花产印度块菌提供了实验依据。OBJECTIVE To analyze composition and relative content of aroma components in Tuber indicum from Panzhihua City.METHODS Chemical constituents in T.indicum from Panzhihua City were extracted by Headspace solid phase microextraction, and the composition and relative content of aroma compounds in T.indicum were analyzed and identified by Gas chromatography-mass spectrometry.RESULTS Thirty seven compounds were identified from the aroma components of T.indicum from Panzhihua, which accounted for 100% of the volatile components of T.indicum. The main chemical components were isovaleraldehyde(55.41%),n-hexanal(8.12%),ethanol(5.14%),1-octen-3-ol(3.62%),isobutyraldehyde(3.27%),sabinene(3.16%),(-)-ningone(2.41%),phenylacetaldehyde(2.14%),n-pentanol(1.78%),(3E)-3-ethyl-2-methyl-1,3-hexadiene(1.42%),(-)-α-platyclone(1.22%),3-octanone(1.16%),tert butylbenzene(1.07%),and heptanal(1.02%).CONCLUSION The method is no organic solvent, automatic, convenient, efficient, fast, safe and environmental friendly, which provides a scientific basis for the research and development of T.indicum from Panzhihua City.
