摘 要:目的了解食用植物油和婴幼儿奶粉中缩水甘油酯(GEs)的污染水平,评估其人群暴露风险。方法利用非衍生化气相色谱串联质谱法(GC-MS/MS)对食用油和婴幼儿奶粉中缩水甘油酯的污染状况进行调查;利用暴露边界比对人群摄入的GEs进行膳食暴露评估。结果食用油和婴幼儿奶粉中GEs的检出率分别为86.2%和86.1%,平均含量分别为0.71 mg/kg和0.025 mg/kg。食用油中有17.0%的样品超过欧盟限量值要求,婴幼儿奶粉均低于限量值要求。暴露评估结果显示,食用油中GEs的暴露边界比为16300.5~2999285.7,婴幼儿奶粉中GEs的暴露边界比为15650.7~86633.2。结论玉米油和茶油中位值的暴露边界比<25000,花生油中位值的暴露边界比略>25000,均存在较高健康风险;0月龄~12月龄婴幼儿暴露边界比<25000,存在健康风险,12月龄~36月龄幼儿暴露边界比>25000,健康风险较低。Objective To investigate the contamination level of glycidyl esters(GEs)in edible vegetable oils and infant milk powder,and to evaluate its exposure risk.Methods Contamination status of glycidyl esters was detected by non-derivative gas chromatography-tandem mass spectrometry(GC-MS/MS);Exposure boundaries were used to compare population intake of GEs and to assess dietary exposure.Results The detection rates of GEs in edible vegetable oils and infant milk powder were86.2%and 86.1%,respectively.The average contents were 0.71 mg/kg and 0.025 mg/kg,respectively.17.0%of the edible oil exceeded the EU limit,and for infant milk powder,all the contents were lower than the limit value.The exposure assessment results showed that the exposed border of GEs in edible oil and infant milk powder was 16300.5-2999285.7 and15650.7-86633.2,respectively.Conclusion The exposed borders of corn oil and tea oil were below 25000,and the that of peanut oil was slightly higher than 25000,so there is a high health risk.The exposed border for infants aged 0-12 months was lower than 25000,and it may pose a potential risk.The exposed border for children aged 12-36 months was higher than25000,and the health risk is very low.
