摘  要:“食品安全学”是食品科学与工程专业的核心课程,也是一门理论与实验并重的课程。在课程教学中引入案例教学对提升教学效果十分有益。结合“食品安全学”课程设置和教学要求,通过介绍案例教学的概念、特点,分析案例教学与理论教学的区别,阐述案例教学对提升教学质量的诸多优点,综合论证案例教学在“食品安全学”教学中的重要作用。此外,从案例教学的流程与组织实施、构建案例教学评价体系、建立案例库等方面探讨案例教学的实际运用,力求在大学本科教育“双一流”教学创新改革大背景下,为运用案例教学提升教学质量水平提供参考。As one of the core courses for the major of food science and engineering,theory teaching and experimental practice were equally important for the course of Food Safety.The introduction of case-based teaching in this course was helpful to improve the teaching effect.Combined with the undergraduate curriculum and teaching requirements of food science and engineering,the concept,development process and characteristics of case-based teaching were introduced,the differences between case-based teaching and theoretical teaching were analyzed,and the advantages of case-based teaching for improving the teaching quality were stated.The application of case teaching was discussed from the case-based teaching process,organization and implementation to construction of case database,laying reference for the improving teaching quality by using case method,under the background of innovation and reform of undergraduate education.
