摘 要:以‘香水’梨为研究对象,考察了采后1-甲基环丙烯(1-methylcyclopropene,1-MCP)处理对其贮藏过程中内在品质和挥发性成分(volatile organic components,VOCs)变化的影响,并对乙烯合成及信号转导、香气合成相关基因表达水平进行定量分析。结果表明,与未处理对照(CK)组相比,1-MCP处理显著抑制果实硬度下降和可溶性固形物质量分数(soluble solids content,SSC)升高(P<0.05),显著抑制呼吸速率和乙烯释放速率,明显降低果皮、果肉中VOCs种类和总量。与CK组同期相比,1-MCP处理果实的果皮、果肉中乙烯合成相关基因ACS1和ACO2,乙烯受体相关基因ETR2、ERS1/2和乙烯信号转导相关基因EIN3,VOCs合成相关基因LOX1/6/8和AAT1的表达量均降低。综上,1-MCP通过下调乙烯合成和乙烯信号转导基因的表达,降低‘香水’梨乙烯生成量和信号传递,降低LOX1/8和AAT1基因表达量,抑制采后贮藏‘香水’梨VOCs生成和品质变化。This study investigated the effects of 1-methylcyclopene(1-MCP)on the quality and volatile organic components(VOCs)of‘Xiangshui’pears during storage,and the expression of genes related to ethylene synthesis and the signal transduction pathway as well as aroma synthesis were determined by real-time polymerase chain reaction(PCR).Results showed that 1-MCP treatment significantly inhibited the decrease in fruit hardness and the increase in soluble solids content(SSC)(P<0.05),suppressed the respiration rate and ethylene production rate,and reduced the number and amount of VOCs in the peel and pulp compared with the control group.Moreover,the expression of the ethylene synthesis genes ACS1 and ACO2,the ethylene receptor genes ETR2 and ERS1/2,the ethylene signal transduction gene EIN3,and the VOCs synthesis genes LOX1/6/8 and AAT1 were down-regulated in both the peel and pulp.Thus,1-MCP can restrain the synthesis of VOCs and quality changes by down-regulating the expression of the ethylene synthesis and signal transduction genes and the expression of the LOX1/8 and AAT1 genes.
