摘 要:以红花籽仁为原料,采用水酶法提取红花籽油,并研究其抗氧化活性。在单因素试验基础上,通过响应面法分析,优化提取工艺参数。结果表明:在料液比1∶4(g/mL)、酶用量5%(以加水量计)、复合酶的质量比2∶1∶3、酶解时间4 h的条件下,红花籽油提取率可达77.60%±0.05%。红花籽油脂肪酸组成以不饱和脂肪酸为主,其中亚油酸、油酸、亚麻酸的相对含量分别为76.51%、11.03%、0.13%;红花籽油对DPPH·的IC_(50)为4.133 mg/mL,具有较好的抗氧化能力。With safflower seed as raw material,safflower seed oil was extracted by aqueous enzymatic method,and its antioxidant activity was studied.On the basis of single factor test,the experimental parameters were optimized by response surface method.The results showed that under the conditions of solid-liquid ratio 1∶4(g/mL),composite enzyme mass ratio 2∶1∶3,enzyme dosage 5%(calculated by wa-ter mass)and enzymatic hydrolysis time 4 h,the yield of safflower seed oil was reached 77.60%±0.05%.The fatty acid composition of safflower seed oil was mainly unsaturated fatty acid,and the relative content of linoleic acid,oleic acid and linolenic acid reached 76.51%,11.03%and 0.13%,respectively.The IC_(50) of safflower seed oil to DPPH·was 4.133 mg/mL,indicating that safflower seed oil had good antioxidant capacity.
