衡水老白干酒中挥发性萜烯类物质的研究

摘　　要：利用单因素分析法对HS-SPME萃取白酒中萜烯化合物的条件进行优化;通过AMDIS解卷积结合保留指数和标准品定性共鉴定出了老白干酒中的54种挥发性萜烯物质,包括单萜18种,倍半萜27种,C13降异戊二烯类化合物9种;通过标准品建立其中31种萜烯物质的内标法定量标准曲线,方法在检测范围内线性关系良好(R2>0.99),具有较好的重复性和回收率;通过对老白干基酒的测定,不同样品中萜烯物质的种类和含量有一定的差异,总的萜类物质的含量范围在1141.91~2816.38μg/L之间。In this study,the univariate analysis method is applied to optimize headspace solid-phase micro extraction(HS-SPME)condition in extracting terpenoids compounds of Baijiu;The results shows that there are 54 volatile terpenes in Laobaigan liquors were identified by AMDIS deconvolution combined with retention index and standard substances.These compounds includes 27 monoterpenes,18sesquiterpenes and 9 C13 norisoprene.The quantitative standard curve of 31 compounds by internal standard method was established through standard substance,The linear relationship within the detection range of this method is good(R2>0.99),and has good repeatability and recovery rate;Through the determination of some laobaigan Baijiu,the sorts and contents of terpenoids in samples from different sources are different,and the content of total terpenoids ranges from 1141.91 to 2816.38μg/L.
