摘 要:目的了解郑州市售蜂蜜中氯霉素和甲硝唑的残留情况,为监管部门提供参考依据,为消费者提供消费指导。方法2018年—2021年随机采集郑州市150份蜂蜜样品,参照《国家食品污染和有害因素风险监测工作手册》的标准操作程序,采用液相色谱-串联质谱法对蜂蜜中氯霉素和甲硝唑含量进行检测。结果150份样品中氯霉素的检出率为2.67%,甲硝唑的检出率为18.67%,氯霉素和甲硝唑的检出率差异有统计学意义(P<0.05)。不同年份间氯霉素和甲硝唑的检出率呈下降趋势。百花蜂蜜中氯霉素和甲硝唑的检出率均为最高。不同品种、不同采样地点、不同包装类型蜂蜜中氯霉素和甲硝唑的检出率差异无统计学意义(P>0.05)。结论郑州市售蜂蜜样品中存在一定程度的氯霉素和甲硝唑残留,残留水平相对较低,有关部门应持续加强监管。Objective This paper aims to investigate the residues of chloramphenicol and metronidazole in honey sold in Zhengzhou City,so as to provide reference for authorities'regulation and guidance for consumers.Methods A total of 150 honey samples were randomly collected in Zhengzhou City from 2018 to 2021,the contents of chloramphenicol and metronidazole in these samples were detected according to the relevant standard operating procedures of Manual China National Food Contamination and Harmful Factors Risk Monitoring.Results The detection rate of chloramphenicol and metronidazole in 150 samples were 2.67%and 18.67%,respectively.There was statistical significance on the difference in the detection rates of chloramphenicol and metronidazole(P<0.05).A decreasing trend was observed in the detection rates of chloramphenicol and metronidazole in different years.The highest detection rates of chloramphenicol and metronidazole were observed in nectar.There was no statistical significance in the detection rates among honey samples from different varieties,sampling sites and packing types(P>0.05).Conclusion There are a certain degree of chloramphenicol and metronidazole residues in honey samples sold in Zhengzhou City,but the level is low,and supervision on it should be continually strengthened.
