摘  要:大麦芽具有良好的营养和风味特征,是啤酒生产的主要原料,也被广泛用于其他食品行业。对基础大麦芽和咖啡麦芽的营养成分进行检测和分析,结果表明,基础大麦芽的营养价值更高,特种麦芽的色、香、味方面更突出,结合大麦芽产品的多样性和特点,介绍了大麦芽食品应用的优势和食品工业需求,及大麦芽在食品工业中的应用现状和应用潜力,为大麦芽在食品工业更多领域高值化的应用提供参考。Barley malt has good nutrition and flavor characteristics.It is the main raw material in beer production and is widely used in other food industries.The diversity and characteristics of barley malt products are introduced,and the nutritional components of basal barley malt and coffee malt are detected and analyzed.The results show that the nutritional value of base barley malt is higher,and the color,aroma and taste of specialty malt are more prominent.Introduce the barley malt products,combine with the advantages of barley malt food application and the demand of the food industry,and comprehensively introduce the application status and potential of barley malt in the food industry.It provides a reference for the application of barley malt in more fields of food industry in the future.
