摘　　要：“食品工厂设计”是食品科学与工程专业核心主干课程,具有很强的理论性和实践性。结合大连工业大学对食品人才培养的目标和专业特色,以工程教育专业认证课程产出导向理念,对“食品工厂设计”课程目标达成度的评价体系进行研究和探讨,构建了该课程目标达成度的评价方法,为提升高校食品学科的教学质量,促进教学体系的持续改进提供参考。Food Factory Design is the core course of food science and engineering specialty,which has strong theoretical and practical significance.Based on the goal and specialty characteristics of food talent training in Dalian Polytechnic University,this paper studied and discussed the evaluation system of the achievement degree of the course goal of Food Factory Design with the output-oriented concept of engineering education professional certification course,and constructsed the evaluation method of the goal attainment degree of the course.It provided reference for improving the teaching quality of food subject and promoting the continuous improvement of teaching system.
