摘　　要：酒体设计是运用感官鉴评、分析,综合评判酒的特性,得出组合配比方案,进行产品研发与创新升级。该技术在白酒领域扮演着极其重要的角色,得到了广泛应用与研究。本文概述了酒体设计理念、流程及特点,综述了其相关系统在白酒行业的应用研究进展,包括酒体设计相关智能辅助工具在小样中的应用、酒体设计设备系统在大样中的应用、酒体设计系统在管理与技术层面及全局的应用等方面,并展望了酒体设计系统在白酒企业的发展前景。Liquor body design is to comprehensively evaluate the characteristics of the base liquor through sensory evaluation and analysis,obtain the combination scheme,and develop new Baijiu products.This technology plays a very important role in Baijiu in-dustry,and has been widely studied and used.This paper introduces the concept,process and characteristics of liquor body design,and reviews the research progress in the application of liquor body design system in Baijiu industry,including the intelligent auxiliary tools,the liquor body design equipment,and the overall application of liquor body design system in management and technology.The development direction of liquor body design system is also prospected.
