餐饮食品营养标识现状及评价工具系统研究

摘　　要：目的:了解国内外餐饮食品营养标识现状及评价工具开发理念和应用研究,为规范和指导餐饮企业实施食品营养标识提供参考。方法:系统检索PubMed、Web of Science、知网、万方、维普数据库等,结合餐饮外卖平台、大型连锁餐饮企业以及第三方开发公司的工具使用情况,调查分析我国餐饮食品营养标识现状,并进行评价工具比较研究。结果:检索我国餐饮食品营养标识评价工具,经初步筛选后得到6个工具做进一步系统研究。结论:未发现应用范围广、影响力强、专业权威、兼顾专业指导和营养交流的餐饮食品营养标识评价工具,急需开发出简单易行、使用成本较低的评价工具供餐饮单位免费使用。Objective:To understand the current situation of nutritional labeling in catering food at home and abroad,as well as the development concept and application research of evaluation tools,in order to provide reference for standardizing and guiding catering enterprises to implement food nutritional labeling.Method:The system searched PubMed,Web of Science,CNKI,Wanfang,VIP databases,etc.,combined with the tool usage of food delivery platforms,large chain catering enterprises,and third-party development companies,to investigate and analyze the current status of nutritional labeling in catering food in China,and conduct a comparative study of evaluation tools.Result:After searching for nutritional labeling evaluation tools for catering food in China,6 tools were obtained through preliminary screening for further systematic research.Conclusion:No catering food nutrition labeling evaluation tool has been found to have a wide range of applications,strong influence,professional authority,and balance professional guidance and nutrition communication.It is urgent to develop a simple and low-cost evaluation tool for catering units to use for free.
