食品微生物检验菌落总数测定中纸片法的应用效果评价

摘　　要：目的:对食品微生物检验菌落总数测定中纸片法的应用效果进行评价。方法:选取生猪肉、湿豆腐、散装糕点、散装饼干、纯净水、新鲜牛肉、新鲜鸭肉、新鲜鸡肉、新鲜鱼肉、散装调味料、新鲜水果和牛奶制品各5份,分别采用平板计数法、纸片法检测菌落总数。比较两组方法测定菌落总数的变异系数、结果评价。结果:纸片法与平板计数法对各样品的菌落总数检出数差异无统计学意义(P>0.05),纸片法、平板计数法测定菌落总数的变异系数、结果评价基本一致(Z<2,P>0.05)。结论:纸片法应用于食品微生物检验菌落总数测定结果较为满意,值得推广。Objective:To evaluate the application effect of the paper method for determining the total number of bacterial colonies in food microbial examination.Method:Raw pork,wet tofu,bulk pastry,bulk biscuit,pure water,fresh beef,fresh duck,fresh chicken,fresh fish,bulk seasoning,fresh fruit and milk products were selected,and the total number of colonies was detected by plate counting method and paper method,respectively.The coefficient of variation of the total number of colonies measured by the two methods was compared and the results were evaluated.Result:There was no significant difference in the total number of colonies detected by disk method and plate counting method(P>0.05).The coefficient of variation and result evaluation of the total number of colonies measured by disk method and plate counting method were basically the same(Z<2,P>0.05).Conclusion:The application of disk method in the determination of the total number of bacterial colonies in food microbiological inspection is satisfactory and worthy of popularization.
