摘  要:测定栽培和野生大果阿魏的营养成分、重金属含量,栽培大果阿魏的挥发油成分和农药残留量,通过氨基酸评分(AAS)、化学评分(CSAA)、氨基酸比值系数评分(SRCAA)和必需氨基酸指数(EAAI)评价大果阿魏蛋白质的营养价值。结果显示:2种大果阿魏中营养成分丰富,总膳食纤维含量(栽培7.93%,野生8.62%)远高于其他富含纤维的蔬菜;两者氨基酸的营养价值相当,重金属含量均低于国家限量标准;栽培大果阿魏中维生素总含量明显高于野生大果阿魏,其挥发油主要为萜类成分;农药残留量远低于国家食品安全标准。The nutritional composition,heavy metal content of cultivated and wild Ferula lehmannii Boiss.,volatile oil composition and pesticide residues of cultivated Ferula lehmannii Boiss.were determined.The nutritional value of Ferula lehmannii Boiss.protein was evaluated by amino acid score(AAS),chemical score(CSAA),amino acid ratio coefficient score(SRCAA)and essential amino acid index(EAAI).The results showed that the two kinds of Ferula lehmannii Boiss.were rich in nutrients,and the total dietary fiber content(cultivated 7.93%,wild 8.62%)was much higher than that of other fibre-rich vegetables.The nutritional value of amino acids was similar,and the content of heavy metals was lower than the national limit standard.The total vitamin content of cultured Ferula lehmannii Boiss.was significantly higher than that of wild Ferula lehmannii Boiss.,and its volatile oil was mainly terpenoids.Pesticide residues were far below national food safety standards.
