摘 要:可食性膜主要通过阻止水分、气体和溶质的迁移等提高食品的新鲜度和机械性能,大量应用在果蔬、肉制品、水产品及其他食品中,具有天然性、安全性和生物可降解性等特点。天然保鲜剂来源广,种类多,抑菌机理各不相同,是食品中常用的添加剂,可防止食品在加工、运输、销售的过程中发生腐败变质,具有适用范围广、安全性高、保鲜效果好等优点。可食性膜复合天然保鲜剂技术已经成为肉制品保鲜方法中的研究热点。本文简要介绍了可食性膜的制备和分类、常用的天然保鲜剂种类以及可食性膜复合天然保鲜剂在食品保鲜中的应用。同时分析了其在肉制品保鲜应用中存在的问题,可为肉制品保鲜的研究提供技术借鉴。Edible film mainly improves the freshness and mechanical properties of food by preventing the migration of water,gas and solutes,etc.They are widely used in fruits,vegetables,meat,aquatic products and other food products due to their natural,safe,and biodegradable characteristics.Natural preservatives are diverse in origin,type,and antimicrobial mechanisms,commonly used additives in food to prevent spoilage during processing,transportation,and sale,offering broad applicability,high safety,and effective preservation benefits.The technology of edible film composite natural preservatives has become a research hotspot in meat preservation methods.This paper briefly introduced the preparation and classification of edible film,commonly used types of natural preservatives and the application of edible film composite natural preservatives in food preservation.At the same time,it analyzed the problems existing in the application of meat preservation,aiming to provide technical reference for the research of meat preservation.
