摘　　要：乳清蛋白中含有抗氧化肽、血管紧张素转换酶(angiote nsin converting enzyme,ACE)抑制肽、二肽基肽酶(dipeptidyl peptidase IV,DPP-IV)抑制肽等多种生物活性肽(bioactive peptides,BAPs),具降血压、降血糖、降血脂等多种功能,有助于人类神经、胃肠、心血管和免疫系统发育,应用前景广阔。BAPs主要由酪蛋白和乳清蛋白经酶促水解、微生物发酵或化学试剂获取。鉴于此,本文概述乳清蛋白的组成及功能,并对国内外有关乳清蛋白酶解制备的BAPs的研究进展进行重点论述,以期为乳清蛋白的高效利用以及相关功能性乳制品的开发提供参考。Whey protein contains a variety of bioactive peptides(BAPs),such as antioxidant peptide,angiotensin converting enzyme(ACE)inhibiting peptide,dipeptidyl peptidase IV(DPP-IV)inhibiting peptide,etc.It has the functions of lowering blood pressure,blood glucose and blood lipids,and is helpful to the development of human nervous system,gastrointestinal system,cardiovascular system and immune system,and has broad application prospect.BAPs are derived from casein and whey protein by enzymatic hydrolysis,microbial fermentation or chemical reagents.In view of this,this paper summarized the composition and function of whey protein,and mainly discussed the research progress on BAPs of whey proteolytic preparation at home and abroad,in order to provide reference for the efficient utilization of whey protein and the development of related functional dairy products.
