摘 要:研究不同浓度24-表油菜素内酯(EBR)浸泡处理对尖孢镰刀菌侵染仔姜贮藏品质的影响。结果表明:EBR处理可有效维持尖孢镰刀菌侵染仔姜良好的色泽和硬度,减缓质量损失和丙二醛(MDA)的累积,抑制相对电导率的上升,延缓维生素C、姜辣素及总酚含量的下降,延缓过氧化氢酶(CAT)活力的下降,提高苯丙氨酸解氨酶(PAL)活力,抑制多酚氧化酶(PPO)活力。当贮藏10 d时,10μmol/L EBR处理组的质量损失率、相对电导率和MDA含量最低,而姜辣素、总酚含量最高。因此,10μmol/L EBR处理最有利于保持尖孢镰刀菌侵染仔姜的贮藏品质。The effect of different concentrations of 24-epibrassinolide(EBR)soaking treatment on the storage quality of baby ginger infected by Fusarium oxysporum was investigated.The results showed that EBR treatment could effectively maintain the good color and hardness of babyginger infected by Fusarium oxysporum,slow down the quality loss and accumulation of malondialdehyde(MDA),inhibit the increase of relative conductivity,delay the decrease of vitamin C,gingerol and total phenolics content,delay the decrease of catalase(CAT)activity,increas phenylalanine ammonia lyase(PAL)activity,and inhibit polyphenol oxidase(PPO)activity.When stored for 10 d,the quality loss,relative conductivity,and MDA content of the 10μmol/L EBR treatment group were the lowest,while the content of gingerol and total phenolics were the highest.Therefore,10μmol/L EBR treatment was the most beneficial for maintaining the storage quality of ginger infected by Fusarium oxysporum.
