摘 要:随着人们对食品安全和质量要求的不断提高,肉类保鲜技术的创新和发展日益受到关注。传统保鲜方法存在局限性,且消费者对食品添加剂的使用也越来越谨慎。在此背景下,可食性涂膜作为一种新型、安全、环保的保鲜技术,逐渐成为研究热点。本文旨在全面探讨可食性涂膜在肉类保鲜中的应用。研究发现,可食性涂膜通过抗氧化、抗菌和水分调节等多重机制,能有效延长肉类保质期并维持其品质。不同类型的涂膜在肉类保鲜中不仅能够表现出各自优势,在与其他保鲜技术的复合应用中也更能发挥协同效应。尽管仍面临一些挑战,但可食性涂膜在肉类保鲜领域展现出巨大潜力,有望推动肉类产业的可持续发展。With the continuous improvement of people’s requirements for food safety and quality,the innovation and development of meat preservation technology are receiving increasing attention.Traditional preservation methods have limitations,and consumers are becoming increasingly cautious about the use of food additives.In this context,edible coatings have emerged as a novel,safe,and environmentally friendly preservation technology and are gradually becoming a research hotspot.This paper aims to comprehensively explore the application of edible coatings in meat preservation.Research has found that edible coatings effectively extend the shelf life of meat and maintain its quality through multiple mechanisms,including antioxidant,antibacterial,and moisture regulation effects.Different types of coatings not only demonstrate their respective advantages in meat preservation,but also have synergistic effects when combined with other preservation technologies.Although there are still some challenges,edible coatings show great potential in the field of meat preservation and are expected to promote the sustainable development of the meat industry.
