摘 要:基于单孔孔板水力空化(hydrodynamic cavitation,HC)装置,对添加3 g/L复合磷酸盐(compound phosphate,CP)的罗非鱼肌原纤维蛋白(myofibrillar protein,MP)进行处理。通过研究粒径、Zeta电位、溶解性、表面疏水性、活性巯基含量、内源荧光光谱、动态流变学性质、凝胶强度、凝胶持水性、凝胶微观结构的变化结果,分析CP与不同HC处理时间(0,1,2,3,4 min)对罗非鱼MP理化和凝胶特性的影响。结果表明,在添加3 g/L CP结合HC处理2 min时,罗非鱼MP的粒径显著减小(P<0.05),而Zeta电位绝对值、溶解性、表面疏水性、活性巯基含量均得到显著提升(P<0.05);内源荧光光谱结果显示最大荧光发射波长发生红移且荧光强度减弱。动态流变学性质结果显示罗非鱼MP的储能模量(G′)和损耗模量(G″)终值均得到提升,且热诱导凝胶强度与持水性得到了显著提高(P<0.05);扫描电镜图像显示罗非鱼MP形成了更加均匀致密的三维凝胶网络结构。因此,HC处理与CP的协同作用能够通过改变罗非鱼MP的理化结构来改善其凝胶特性,在减盐淡水鱼糜制品的开发中具有广阔的应用前景。Tilapia myofibrillar protein(MP)added with 3 g/L compound phosphate(CP)is treated based on a single-hole orifice plate hydrodynamic cavitation(HC)device.The effects of CP and different HC treatment time(0,1,2,3,4 min)on the physicochemical and gel properties of tilapia MP are analyzed by studying the change results of particle size,Zeta potential,solubility,surface hydrophobicity,active sulfhydryl content,endogenous fluorescence spectroscopy,dynamic rheological properties,gel strength,gel water holding capacity and gel microstructure.The results show that when tilapia MP is treated with 3 g/L CP combined with HC for 2 min,the particle size of tilapia MP significantly decreases(P<0.05),while the absolute value of Zeta potential,solubility,surface hydrophobicity and active sulfhydryl content significantly increase(P<0.05).Endogenous fluorescence spectroscopy results show that the wavelength of maximum fluorescence emission is red-shifted and the fluorescence intensity is weakened.The results of dynamic rheological properties show that the final values of energy storage modulus(G')and loss modulus(G")of tilapia MP are enhanced,and the thermally induced gel strength and water holding capacity are significantly improved(P<0.05).Scanning electron microscopy images show that tilapia MP forms a more homogeneous and dense three-dimensional gel network structure.Therefore,the synergistic effect of HC treatment and CP can improve the gel properties of tilapia MP by changing its physicochemical structure,which has broad application prospects in the development of salt-reducing freshwater surimi products.
