摘 要:脂质作为水产品的重要营养来源,对水产品的风味质地和营养价值均有重要影响,通过解析水产品的脂质构成以探究其功能作用和代谢机制。高分辨质谱联合脂质组学技术作为一种新兴手段,突破了气相色谱、液相色谱和薄层色谱等传统脂质分析手段在准确度和检测限方面的局限,实现了脂质分子的精确鉴定和脂质结构与功能的精细分析。笔者对八大类脂质的结构特点与功能特性,以及脂质组学的检测分析方法进行了系统阐述,并综述了高分辨质谱脂质组学技术在水产品营养与品质评价中的应用研究进展,旨在为脂质组学在水产品中的研究与应用提供参考。As an important source of nutrients in aquatic products,lipids have an important impact on their flavor,texture and nutritional value.Analyzing the lipid composition of aquatic products can help explore their functional effects and metabolic mechanisms.High-resolution mass spectrometry combined with lipidomics technology is an emerging method that breaks through the limitations of traditional lipid analysis methods such as gas chromatography,liquid chromatography,and thin layer chromatography.It offers greater accuracy and detection limits,enabling the accurate identification of lipid molecules and the fine analysis of lipid structure and function.In this paper,the structural and functional characteristics of eight types of lipids,as well as the detection and analysis methods of lipidomics,are systematically expounded,and the research progress of the application of lipidomics technology by high-resolution mass spectrometry in the nutrition and quality evaluation of aquatic products is reviewed,in order to provide reference for the research and application of lipidomics in aquatic products.
