摘 要:酵母β-葡聚糖是一种从酵母菌中提取的多糖类物质,具有β-1,3-葡聚糖主链,已被批准为新食品原料,广泛应用于食品、生物等行业。体内外实验和人群临床实验揭示酵母β-葡聚糖是一种免疫调节剂并具有益生元效益。该文对酵母β-葡聚糖的免疫调节、改善肠道健康、调节糖脂代谢、抗氧化等功能活性及其在食品工业中的应用进行综述,以期为酵母β-葡聚糖健康产品的创制提供理论参考。Yeastβ-glucan is the polysaccharide extracted from yeast,withβ-1,3-glucan as the backbone.It has been approved as a new food ingredient and it is widely applied in the food and biological industries.In vi⁃tro and in vivo experiments,as well as clinical trials,have demonstrated yeastβ-glucan to be an immunomodulator and prebiotic.Therefore,the biological activities of yeastβ-glucan,including immunomodulation,intestinal health improvement,glycolipid metabolism regulation,and antioxidant properties,were summarized.In addition,the application of yeastβ-glucan in the food industry was reviewed,with the aim of providing theoretical references for the development of health products with yeastβ-glucan.
