白酒饮后不良感受的影响因素分析

摘　　要：为了分析影响白酒饮后不良感受的主要因素,本研究对市场46款热销白酒的关键指标进行检测分析,发现不同白酒中甲醇和高级醇的含量与白酒香型呈现一定的相关性。基于此,可推断白酒中的甲醇或者异戊醇、正丙醇等高级醇并非造成饮后不良感受的主要原因。乙醇作为白酒的主要成分之一,其代谢产物乙醛对人体影响表现为恶心、呕吐、头晕、头痛、嗜睡、昏迷等症状,与醉酒表现相似,可见饮后不良感受主要是因为过量饮酒后乙醇在体内代谢产生大量乙醛聚集引起的。长碳链的高级醇在人体内代谢速度缓慢,也是影响饮后感受的因素之一。In order to analyze the main factors influencing the bad feelings after drinking Baijiu,we detected the key indicators of 46 popular Baijiu products in the market,and found that the content of methanol and higher alcohols in Baijiu showed a certain correlation with the flavor type of Bai-jiu.On this basis,it can be concluded that methanol or higher alcohols such as isoamyl alcohol and n-propanol in Baijiu are not the main factors influ-encing the bad feelings after drinking.Ethanol,as one of the main components of Baijiu,its metabolite acetaldehyde has effects on human body,which are manifested as nausea,vomiting,dizziness,headache,lethargy,coma and other symptoms,similar to drunkenness.It can be concluded that the bad feelings after drinking are mainly caused by the accumulation of large amount of acetaldehyde in human body after excessive alcohol con-sumption.The slow metabolism rate of long-chain higher alcohols in human body is also one of the factors affecting the feelings after drinking Baijiu.
