冷冻饮品中真菌污染状况及其菌相分布

摘　　要：〔目的〕为了解冷冻饮品产品受真菌污染状况 ,主要菌相分布对不同种类冷冻饮品中真菌的检出情况 ,为我国制定冷冻饮品 ,中真菌的卫生标准提供科学依据。〔方法〕参照食品微生物检验方法中GB4789.15 -94-0 5 -18随机进样 ,对进市及本市生产、销售的 45 0份、98个品种进行了真菌监测、菌属鉴定 ,并加以分析。〔结果〕共检出霉菌样品 170份 ,3 5 7株 ,总检出率 3 7.78% ;酵母菌 166份 ,总检出率 3 6.88% ;主要菌相为霉菌、酵母菌。且同一品种受不同真菌污染严重。〔结论〕冷冻饮品真菌污染严重 ,检出率高 ,应把其检测纳入卫生检验项目 ,并尽快制定我国冷冻饮品中真菌卫生标准。睴bjective〕For the sake of the cold food product of solution,that hygiene standard mat suffer the fungi the contaminative condition, main to distribute and the fungi of cold food inside of different category outs circumstance, establish the inside fungi of cold food for our country to provide the science basis. 〔Method〕The shine ons the food microorganism the examination method the inside the GB4789.15-94-05-18, adopt the kind with the machine, right produce into the municipal and this municipal, sale of 450,98specieseses proceeds the fungi monitor, the belong to the to settle, and take into the analysis.〔Result〕Totally the is out the 170 fungi sample,357 stubs, total are out the rate 37.78%;The 166 total yeast fungus is out the rate 36.88%;The main is a fungi, yeast fungus. A/nfl the same species suffer pollution of different fungi seriously.〔Conclusion〕Cold food product the fungi pollute serious,theouts the rate is high. Should into the hygiene the examination the item its examination, and as soon as possible bring establish the our country the cold food inside fungi hygiene standard.
