摘  要:建立了测定蔗糖的分光光度法 ,在酸性介质中 ,蔗糖还原磷钼黄生成磷钼蓝 ,对该反应进行了详细的研究 ,确定了最佳反应条件 ;结果表明 ,所生成的磷钼蓝最大吸收波长在820nm ,蔗糖溶液在0.57~22.56mg/L服从比尔定律 ,表观摩尔吸光系数为1.17×104 L/(mol·cm) ,定量下限为0.57mg/L;该法灵敏度高、选择性好 ,用于甘蔗汁样品的测定 ,结果令人满意 ;A method for determination of sucrose was developed by spectrophotometry.It was found that in sulˉphuric acid medium sucrose can reduce phosphorus molybdenum yellowto form phosphorus molybdenum blue.The reaction was investigated in detail and the optimal reaction conditions were obtained.The maximum absorption wavelength of resulting phosphorus molybdenum blue is at820nm.Beer's law is obeyed over the concentration range of0.57~22.56mg/L of sucrose and the apparent molar absorbancy index is1.17×10 4 L/(mol·cm).The method was applied to the determination of sucrose content in sugarcane juice samples with satisfactory results.The mechanism of reaction of sucrose with phosphorus molybdenum yellowwas discussed.
