摘　　要：木糖醇的理化性质类似于蔗糖 ,是一种应用广泛的甜味剂 ,其自身特有的功能赋予了它保健性 .本文简单的介绍了木糖醇的理化性质 ;讨论了其在营养学、临床医学上的保健功能性 ;综述了其作为甜味剂在食品行业中的应用。探讨了今后的研究前景 ;对木糖醇在食品中的应用提出了见解。The characters of xylitol are similar to saccharose.Xylitol is universal Sweeteners additive,which is applied in many fields.It's peculiar character made its have health function.This paper summarized the chemistry and physics characters of xylitol.It was also elucidated xyiltol's heath function on nutrition and medicine,emphasised on studying the application of xylitol in food insdutry.Further research is needed to fully understand the microbiological resource and separation on xylitol study.we also widely applied it into food jndustry.
