摘　　要：在前期研究的基础上,通过对冰、冻豆腐、冻肉的解冻试验和分析结果,揭示了在高压脉冲电场作用下对冰水相变的加速作用及其规律。In the base of initial study, through the compare of the three high voltage pulse thawing equipments, we founded the most proper equipment. Through analyzing the data of water, bean curd, minced meat and diced meat thawing experiment, we found how high voltage pulse electric field accelerate the food thawing and the rule of it, and then we studied the principle of this rule.
