摘 要:研究了茶多酚双液相氧化制取茶色素工艺。结果表明 :放大实验较优化实验茶色素中茶黄素 (TFs)含量更高 ;反应液中TFs萃取效率以第 1次最高 ,其他各次效率依次降低。对茶色素进行Tris HCl (pH 8 0 )洗涤 ,其洗涤效率也以第 1次最高 ,TFs含量随洗涤次数增多呈现递增趋势 ,但被洗液体积呈递减趋势 ,并存在脱没食子酰基作用。The technology of preparation and extraction of tea pigments from tea polyphenols oxidized in two-liquid-phase system was studied.The results showed that there was higher content of theaflavins(TFs)in tea pigments from magnified test compared with optimized test.The extraction efficiency of TFs in tea pigments was the highest in first extracted reaction liquid,and the others were reduced in file.When tea pigments were washed with Tris-HCl buffer(pH 8.0),the washing efficiency was the highest in first washing and the contents of TFs increased with washing times,but the volume of washed liquid was decreased accordingly,and there was de-galloyl group action during washing.
