山东省部分城市街头食品卫生现况及其影响因素分析

摘　　要：[目的 ]了解山东省街头食品市场基本情况和食品卫生现况 ,探讨市场管理模式与街头食品卫生状况之间的关系以及影响街头食品卫生的有关因素。 [方法 ] 2 0 0 3年 4～ 5月 ,在济南市、淄博市和潍坊市选择 5种常见的街头食品市场 ,对 3 71个摊位进行现场调查 ,对其中 2 91个摊位的食品采样检验。 [结果 ] 3 71个街头食品摊位的卫生许可证持有率为 85 5 % ,现场卫生合格率为 71 9% ;2 91个摊位中清洁食品所占比例为 5 4 3 % ,其中早夜市、专营市场、集贸市场、室内综合商场和路边摊位分别为 5 1 3 %、63 3 %、5 5 4%、80 0 %和 3 6 1% ( χ2 =2 1 74,P <0 0 1)。多因素分析结果表明 ,专营市场摊位、有卫生许可证的摊位、现场卫生合格的摊位的清洁度较高 ,凉拌食品的清洁度较低。 [结论 ]山东省城市街头食品污染状况比较严重 。To explore the basic situation and hygienic status of street food in Shandong Province, approach the relationship between market models and hygienic status and analyse the relative factors affected the hygienic status of street food.371 street food stalls belonging to five different common market models in Jinan Zibo and Weifang were selected randomly and 291 street food stalls were sampled to test for studying in April to May, 2003.Only 85.5% were operated with valid health licenses among 371 street food stalls. The comprehensive evaluation indicated that 71.9% could meet the required standard. The stalls with clean food accounted for 54.3%. The stalls with clean food in the morning or evening markets accounted for 51.3%, the street food centers accounted for 63.3%, the fair accounted for 55.4%, the super markets accounted for 80.0% and the stalls beside road accounted for 36.1%. Uni-variate analysis showed that there was significant difference in variant street food market models(χ 2=21.74,P<0.01). Multi-variate stepwise regression analysis indicated that the clean food rate of stalls in the the street food centers, with valid health licenses and business space hygiene meeting the required standard were higher, cold food was lower.[Conclusions]The results mentioned above indicate that the street food contamination is serious in Shandong province. The contamination status of food in the morning or evening markets, the fair and the stalls beside road is more serious.
