摘  要:长期以来,人们不清楚“乳腐”究竟为何物,学者们分别提出“乳腐”豆腐说、“乳腐”酸酪说和“乳腐“干酪说。本文认为“乳腐”亦名“乳饼”,即今之“奶豆腐”,它是胡汉饮食文化交流的产物,并认为豆腐的发明极有可能是受“乳腐”的启发所致。People do not exactly known what is rufu (“乳腐”) for many years. Scholars respectively suggest some theories that demonstrate what is rufu, such as it is bean curd, it is yoghourt, and it is cheese, ect. This paper considers that rufu which is milk curd today was called rubing also in ancient Chinese's documents, It was the outcome of the intercommunion in the dietary culture between Huzu and Hanzu, The invention of bean curd might be inspired by rufu.
