摘  要:利用废弃啤酒酵母中试生产出品味良好的高级酵母精。废弃啤酒酵母经洗涤、NaHCO_3预处理,拌水调成酵母悬浮液,添加食盐约3%(w/w),控制起始pH6~7,于40~60℃自溶44h左右。自溶后经分离、浓缩、调配等工序制得糊状酵母精成品。该产品为棕褐色,鲜香浓郁;含有18种氨基酸、蛋白质、维生素等多种营养成份;其氨基氮、总氮、食盐、水分含量分别约为1.9、3.4、14、51g/100mL。每100kg含水量约69%的压榨酵母可产出该质量水平的糊状酵母精约55kg。生产每t糊状酵母精的原料成本约2500元。应用试验表明,酵母精可显著增进火腿肠、方便面、菜肴和酱油等的风味,提高它们的食用品质。A dark-brown palatable yeast extract made from brewer’s yeast is obtained by method of autolysis on a pilot scale. The yeast is first washed with water and treated with NaHCO3,then mixed with water to make a slurry. The autolysis process is then carried out at 40 ̄60C with 3% (w/w) of salt and initial pH value of 6~7 for about 44 hours. After a successive process of centrifugating separation, concentration, the brown paste of yeast extract is then mixed with other ingridients to form the final product,which includes at least 18 kinds of amino acids, vitamins and other nutrition components. Each 100 mL of the product contains about 3. 4 grams of total nitrogen(among which about 1. 9 grams is free α-amino nitrogen) .about 14 grams salt. about sl grams water. 55 kg product can be obtained from 100 kg material with about 69% water content. The material cost is about 2500 yuan RMB per ton.The aplication test shows that the yeast extract can notably enhance the flavour of sausage,instant noodles,dishes,soy sauce and other foods.
